We all have those favorite, not-so-healthy dishes that we simply can’t resist when the cravings hit. This class will equip you with an arsenal of alternative ingredient choices and cooking methods for re-vamping those sinful recipes in a flavorful and satisfying way. Learn how to use more healthful baking techniques, swap out certain fats for healthier ones and, most of all, how to successfully revamp a recipe (or when not to even try). Lucy will even share her own alternative approach to her favorite childhood meal, spaghetti and meatballs, using whole grains, nuts, tempeh and gluten-free ingredients. Drawing Fundamentals

Mondays, Feb 23-March 30, 2015. 5:30-8:30pm Develop and grow your drawing skills over six weeks. This six-week intensive enables beginning- and intermediate-level artists to experiment with still life and self portraiture while advancing their fundamental technical skills. Using primarily charcoal, conte and paper, students will begin with still life and evolve toward making self portraits using mirrors. All students will apply the principles of value, basic composition and proportion using geometric forms and more complicated shapes (including cast heads and torsos), leading into to self portraiture. Throughout the class, students will be encouraged to explore and develop their own authentic voice. $200 tuition + $50 materials

Skiers and boarders hit rails, throw flips, cross their skis and grab their boards to see who has the best moves and style. Music will be available from DJ Soul Atomic. Leftover Salmon

The bluegrass, funk, rock, boogie, Caribbean and jazz sound of the band Leftover Salmon will be revisiting Telluride on Febuary 19th and 20th at the Sheridan Opera House.  The band's unique and wonderful sound will guarentee a fun-filled night for all.  Tickets are $30 general admission on the floor and $40 reserved in the balcony.
